They're my husband's favorite and I'm sure your loved ones will go nuts for them too! RECIPE: Ingredients For the cookies: • ½ cup unsalted butter (1 stick), at room temperature • ½ cup granulated sugar • ⅓ cup brown sugar • 1 egg • ½ tsp vanilla extract • 2 tsp red food coloring (can go up to 3 if you feel your dough isn't red enough) • 1½ cups flour • ¼ tsp salt • ½ tsp baking soda • ¼ tsp cream of tartar • ¼ cup unsweetened cocoa For the frosting: • 4 oz cream cheese • 4 tbsp unsalted butter, at room temperature • 1 tsp vanilla extract • 2 cups powdered sugar Instructions 1. In a large bowl, cream together the butter and sugars. Add the egg, vanilla and red food coloring and beat until smooth. 2. In another bowl, combine the flour, salt, baking soda, cream of tartar and cocoa powder. 3. Pour the dry ingredients into the wet ingredients and mix well. 4. Let the dough rest for 30 to 60 minutes in the refrigerator. When ready, pre heat oven to 325 F. Drop tablespoonfuls of dough on a baking sheet lined with parchment paper. 5. Bake the cookies for 12 to 14 minutes. The cookies may seem undercooked, but will continue to develop after they are removed from the oven. When the cookies have cooled they should be soft and chewy in the middle. 6. While the cookies are baking, make the frosting: in a bowl, mix together the softened butter, cream cheese and vanilla until creamy. Add in the powdered sugar and mix, ½ cup at a time, until the desired sweetness is achieved. Make sandwiches with the cookies and frosting, and serve!
